Disaster System switched OFF for 7 hours!

On Sunday, my parents came over to stay... My mom, as usual, goes around the house looking for something to clean, arrange, or replace... Monday night, she noticed a power socket switched to ON in the living room... Without caring where the inserted plugs lead to, she flipped the switch...! :facepalm:

6am in the morning, after 7 hours have passed, I went outside to check my system and realized that it was silent... The pump wasnt pumping water!

25 to 30 guppies died that day... The tilapias were fine as they were saved by the aerators backup power but the water had a slight rotting odor probably due to accumulated ammonia...

 The thick layer of gunk collected at the bottom of the guppy tank may have also contributed to their death as it contains loads of greedy bacteria competing against them for the remaining precious oxygen...

As for the plants, strong winds have been the main problem this few days... After being knocked over by the wind repeatedly, all my okras had given up and none could stand upright properly now... I got to think of a solution fast...

Skinny Tilapia Lettuce Wraps

This weeks recipe features two Lone Duck specialties: Lettuce AND Tilapia!

 
Skinny Tilapia Lettuce Wraps

Prep time: 10 minutes
Cook Time 5-10 minutes
Yield: 4 servings
Serving size: 2 wraps with 4 oz tilapia per wrap?
Ingredients
  • 1 tsp extra virgin olive oil
  • 1 small onion, diced
  • 2 Tbsp garlic, minced
  • 2 lbs tilapia fillets
  • 1 Serrano pepper, diced + seeded
  • 2 Tbsp diced jalapeƱos
  • 2 cups diced tomatoes
  • ¼ cup cilantro, chopped
  • 1 lime, juiced
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • 8 large Romaine leaves
  • 2 cups purple cabbage, shredded
  • 4 Tbsp reduced-fat sour cream
  • 1 avocado, thinly sliced
Instructions
  1. In a large skillet, heat olive oil over medium heat. Add onion and garlic. Cook for 2 minutes
  2. Add tilapia to skillet and cook 3-4 minutes on both sides until fish turns white.
  3. Break up fish with spatula into small pieces and mix with onions and garlic.
  4. Add Serrano pepper, diced jalapeƱos, tomatoes, cilantro, lime juice, salt and pepper. Stir. Cook for another 3-5 minutes.
  5. Arrange lettuce leaves on a platter. Spoon ? cup fish mixture down the center of each leaf. Top each lettuce wrap with ¼ cup of shredded purple cabbage, ½ Tbsp sour cream and a few thin slices of avocado

Tuesday Hours Change

Weve changed our on-farm hours for Tuesdays- were now open from 1 p.m. to 6 p.m. on Tuesdays

*If this doesnt work well for you, fret not! Were still available by appointment, as always- just give us a call or send us an email and wed be more than happy to find a different time to have you stop out at the farm for some tasty produce or tilapia!


**Though it seems absolutely crazy to write this, the last 8 1/2 months have flown by (no pun intended) and there may be additional, last minute changes to our hours based on the upcoming arrival of our own "Little Duck." Unless you are a CSA customer (in which case, youll receive your own update/instructions), please check this blog or our Facebook page before stopping out at the farm in the next few weeks- we may be (very excitedly) unavailable during our normal hours!
